I have a UK passport and a French ID.Would I need to show both to be exempted?

So the EU, now say we, the traveller will process our own documents, rather than the Border Force doing it. And also charge the traveller for the privilege of doing so. It also doesn’t say where the data is to be held and how secure it is! Only that it is held for 3 years.

We get a VLS-T visa each year and stay for 3 months, plus we stay 3 months on the Schengen allowance. We return between these two stays for health reasons. When we apply for the visa annually, we have to present photocopies of our passports showing all stamps etc. My question is, given that passports will not be stamped, should we assume that the visa agency has access to these digital records, and if so, as a supplementary, where can I have access to these if I need to challenge errors?
